Europa uses a handle that attaches to the two sided bellcrank that actuates the shoot bolts, Gallows has a lever with a rope attached that when pulled snatches the floor out from under ones feet. Not a very desirable thing to have done to you when a noose is around your neck!
One has a much better chance of survival if someone actuating handle of Europa door in flight compared to having someone actuating Gallows lever for you.
